{"id":235,"date":"2019-02-03T00:38:46","date_gmt":"2019-02-03T00:38:46","guid":{"rendered":"http:\/\/ramimarcus.com\/Recipes\/?p=235"},"modified":"2020-09-14T03:46:21","modified_gmt":"2020-09-14T03:46:21","slug":"lemon-curd","status":"publish","type":"post","link":"https:\/\/ramimarcus.com\/Recipes\/lemon-curd\/","title":{"rendered":"Lemon Curd"},"content":{"rendered":"<h2><span style=\"font-size: 16px; font-weight: 400;\"><strong>Yield<\/strong>: 1 1\/2 cups<\/span><\/h2>\n<h2>Ingredients<\/h2>\n<div>\u2022 1\u00a0cup sugar<\/div>\n<div>\u2022\u00a02 tablespoon lemon zest<\/div>\n<div>\u2022\u00a03 whole eggs<\/div>\n<div>\u2022\u00a03 egg yolks<\/div>\n<div>\u2022\u00a02\/3 cup fresh squeezed lemon juice (about 4-5 lemons)<\/div>\n<div>\u2022\u00a03 tablespoons unsalted butter (optional)<\/div>\n<h2>Instructions<\/h2>\n<ol>\n<li>\n<div>Add sugar and zest to a bowl, and incorporate the two together with your fingers<\/div>\n<\/li>\n<li>\n<div>Next add the whole eggs and the yolks, and then the lemon juice.\u00a0 Gently combine with a whisk, just until the sugar is dissolved.\u00a0 Be careful not to whisk too hard as you don\u2019t want to incorporate too much air into the mixture.<\/div>\n<\/li>\n<li>\n<div>Heat a pot of water to boiling, then reduce to low to simmer.\u00a0 Set the bowl with the lemon curd mixture over the pot (double-boiler method), making sure that the bowl is not actually touching the simmering water. If you use a low heat and a decent pot, you can get away with heating directly in the pot, but be very careful not to overheat and cook the eggs.\u00a0 Either way, use a rubber spatula to continuously stir the lemon curd mixture.<\/div>\n<\/li>\n<li>\n<div>Cook to 170F, roughly 10 minutes.\u00a0 The curd mixture should be thick and pudding-like. Carefully remove the bowl with the curd from the pot of simmering water.<\/div>\n<\/li>\n<li>\n<div>Add the butter (if using) and stir until melted.<\/div>\n<\/li>\n<li>\n<div>Strain into a bowl.\u00a0 The curd should now have a smooth, luxurious consistency.<\/div>\n<\/li>\n<li>\n<div>Cover with plastic wrap to prevent skin from forming; place into refrigerator and completely chill before using.<\/div>\n<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>This lemon curd is very tart, which works well when filling something very sweet, but more sugar can be added to sweeten.
