{"id":372,"date":"2019-05-11T02:20:23","date_gmt":"2019-05-11T02:20:23","guid":{"rendered":"http:\/\/ramimarcus.com\/Recipes\/?p=372"},"modified":"2019-05-11T02:20:45","modified_gmt":"2019-05-11T02:20:45","slug":"ganache","status":"publish","type":"post","link":"https:\/\/ramimarcus.com\/Recipes\/ganache\/","title":{"rendered":"Ganache"},"content":{"rendered":"<p><strong>RATIO<\/strong>: 1:1, 2:1, 1:2.<\/p>\n<p><strong>Yield<\/strong>: About a cup.<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>4oz Chocolate<\/li>\n<li>4oz Heavy cream<\/li>\n<li><em>(Optional)\u00a0<\/em>Pinch of salt<\/li>\n<\/ul>\n<h2>Instructions<\/h2>\n<ol>\n<li>Heat the cream to a simmer.<\/li>\n<li><em>Optional: <\/em>If infusing a flavor, add the ingredient, remove from heat and let steep for 10m.\u00a0 Strain if necessary, then reheat to a simmer.<\/li>\n<li>Pour over chocolate.<\/li>\n<li>Let sit a few minutes to melt the chocolate.<\/li>\n<li>Whisk gently to combine.<\/li>\n<\/ol>\n<h3>NOTES:<\/h3>\n<ol>\n<li>The ratio can be modified to change viscosity:\n<ul>\n<li>1:1 for spreading<\/li>\n<li>2:1 for filling, decorating, or truffles<\/li>\n<li>1:2 for dipping, pouring, or whipping<\/li>\n<\/ul>\n<\/li>\n<li>All 3 types can be whipped to lighten the texture and improve stability.<\/li>\n<li>Alcohol &#8211; Replace 1\/2 &#8211; 1oz of cream with liquor: Rum, TripleSec, Irish Cream, Kahlua, etc.<\/li>\n<li>Infuse cream with spices &#8211; Citrus zest, Cardamom, Lavender, Rosemary, etc.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>Flavor ideas:<\/p>\n<p>Cardamom with orange liquor<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ganache is an incredibly simple and flexible dessert sauce made from chocolate and cream.
