{"id":472,"date":"2019-11-12T07:11:22","date_gmt":"2019-11-12T07:11:22","guid":{"rendered":"http:\/\/ramimarcus.com\/Recipes\/?p=472"},"modified":"2019-11-30T23:15:39","modified_gmt":"2019-11-30T23:15:39","slug":"stuffed-butternut-squash","status":"publish","type":"post","link":"https:\/\/ramimarcus.com\/Recipes\/stuffed-butternut-squash\/","title":{"rendered":"Stuffed Butternut Squash"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<ul>\n<li>Butternut squash (or any large squash, really) halved lengthwise<\/li>\n<li>Twine<\/li>\n<li>Kale (<em>optional<\/em>)<\/li>\n<li>Pumpkin seeds (<em>optional<\/em>)<\/li>\n<\/ul>\n<h3>Stuffing<\/h3>\n<ul>\n<li>1 onion, finely chopped<\/li>\n<li>1 stick celery, finely chopped<\/li>\n<li>1 carrot, grated<\/li>\n<li>1 apple, chopped<\/li>\n<li>1\/2 bunch of sage<\/li>\n<li>60g breadcrumbs, about 1\/2c<\/li>\n<li>1 egg yolk<\/li>\n<\/ul>\n<h3>Sauce<\/h3>\n<ul>\n<li>500ml Apple cider<\/li>\n<li>150ml Cream<\/li>\n<li>1 tbsp mustard<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h2>Instructions<\/h2>\n<h3>Prepare the Stuffing<\/h3>\n<ol>\n<li>If baking the same day, preheat oven to 375F.<\/li>\n<li>Scoop out the flesh from the squash, leaving a shell 1-2cm thick. (Try to leave a consistent width.)<\/li>\n<li>Finely chop the scooped squash.<\/li>\n<li>Heat some oil in a pan, and the squash, onion, celery, and carrot until soft.<\/li>\n<li>Add the breadcrumbs, apple, sage, and some salt.<\/li>\n<li>Let the mixture cool slightly and then add the egg yolk.<\/li>\n<\/ol>\n<p>NOTES: The stuffing mixture can be made the day before and refrigerated.\u00a0 If you&#8217;ve done this, heat slightly in a microwave before adding to the squash.<\/p>\n<h3>Bake the Squash<\/h3>\n<ol>\n<li>If you haven&#8217;t already, preheat oven to 375F.<\/li>\n<li>Season the squash shell and add the stuffing to the two halves.<\/li>\n<li>Place the halves back together and tie with twine.<\/li>\n<li>Put onto a roasting rack, or use a baking tray\/dish with aluminum foil scrunched up on either side to keep it from rolling.<\/li>\n<li>Drizzle with oil, and bake for 1 1\/2 to 1 3\/4 hours or until tender.<\/li>\n<\/ol>\n<h3>Make the Sauce<\/h3>\n<ol>\n<li>Reduce the cider by 1\/2.<\/li>\n<li>Add the cream, stir until thickened.<\/li>\n<li>Finish with mustard.<\/li>\n<\/ol>\n<p>Serve over blanched kale and sprinkle with pumpkin seeds.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Simple to make, wonderfully Fall, and of course very tasty.
