{"id":524,"date":"2020-01-18T07:02:17","date_gmt":"2020-01-18T07:02:17","guid":{"rendered":"http:\/\/ramimarcus.com\/Recipes\/?p=524"},"modified":"2020-01-18T07:14:40","modified_gmt":"2020-01-18T07:14:40","slug":"indian-spicy-pancakes","status":"publish","type":"post","link":"https:\/\/ramimarcus.com\/Recipes\/indian-spicy-pancakes\/","title":{"rendered":"Indian Spicy Pancakes"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Pancakes<\/h3>\n<ul>\n<li>1 tsp whole cumin<\/li>\n<li>1&#8243; ginger, diced<\/li>\n<li>3-5 cloves garlic, diced<\/li>\n<li>1\/2 jalepeno, diced (about 1 tbsp)<\/li>\n<li>1c flour (MAYBE MORE, can&#8217;t remember.)<\/li>\n<li>1 egg<\/li>\n<li>1c milk<\/li>\n<\/ul>\n<h3>Filling<\/h3>\n<ul>\n<li>1 tsp mustard seeds<\/li>\n<li>1\/2 large onion, sliced thin<\/li>\n<li>1 tsp turmeric<\/li>\n<li>2-3lbs boiled \/ leftover potatoes<\/li>\n<\/ul>\n<h3>Dipping Sauce<\/h3>\n<ul>\n<li>6tbsp plain yogurt<\/li>\n<li>2tbsp chopped cilantro<\/li>\n<\/ul>\n<h2>Instructions<\/h2>\n<h3>Prep Pancake Batter<\/h3>\n<ol>\n<li>Toast cumin with some salt in a dry pan until aromatic.<\/li>\n<li>Add olive oil, then add the ginger, jalepeno, and garlic.<\/li>\n<li>Remove to a bowl.<\/li>\n<li>Add flour.<\/li>\n<li>Whisk in egg.<\/li>\n<li>Add the milk a little at a time, whisking thoroughly before continuing. Continue adding milk a little at a time until you have a pourable batter.\u00a0\u00a0Remember this is batter, not dough &#8211; it should have a thin, almost watery consistency.\u00a0 You may not need all of the milk.<\/li>\n<li>Add 1 tsp oil<\/li>\n<li>Salt &amp; pepper to taste.<\/li>\n<\/ol>\n<h3>Prep Filling<\/h3>\n<ol>\n<li>In the same pan, add oil if needed.\u00a0 Allow to warm, then add the mustard seeds.<\/li>\n<li>Add the onion.\u00a0 Mix in turmeric.<\/li>\n<li>Spread the potatoes across the pan.\u00a0 Add salt.<\/li>\n<li>Cook until warmed through.<\/li>\n<\/ol>\n<h3>Make the Dosas<\/h3>\n<ol>\n<li>In a clean, hot pan, add oil and spread with a spatula.<\/li>\n<li>Pour some batter in the middle, picking up and tilting the pan to spread it evenly across the surface.\u00a0 They should be very thin out to the edges.<\/li>\n<li>Cook until the pancake starts to bubble and lift away from the pan.<\/li>\n<li>Flip and cook until starts to brown.<\/li>\n<li>Slide onto a plate.\u00a0 Spoon a line of the potato mixture onto the pancake and roll.\u00a0 Serve immediately.<\/li>\n<\/ol>\n<h3>Make the Dipping Sauce<\/h3>\n<ol>\n<li>Mix the chopped cilantro into the yogurt.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>NOTES:<\/p>\n<p>The filling tastes even better when the flavors have had a chance to meld together; leftovers may be slightly soggy but are delicious.\u00a0 Alternatively, make the filling the day before and reheat in the microwave under a wet paper towel.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A take on dosas, this recipe uses more readily available wheat flour instead of rice and lentil flour.
