{"id":648,"date":"2020-05-24T21:48:02","date_gmt":"2020-05-24T21:48:02","guid":{"rendered":"http:\/\/ramimarcus.com\/Recipes\/?p=648"},"modified":"2020-05-24T22:30:03","modified_gmt":"2020-05-24T22:30:03","slug":"golden-coconut-soup","status":"publish","type":"post","link":"https:\/\/ramimarcus.com\/Recipes\/golden-coconut-soup\/","title":{"rendered":"Golden Coconut Soup"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<ul>\n<li>1 onion, chopped<\/li>\n<li>3 garlic cloves, chopped<\/li>\n<li>50g ginger, finely julienned<\/li>\n<li>1 chili pepper<\/li>\n<li>1 stalk of lemongrass, cut in half and crushed with the flat of a knife<\/li>\n<li>2tbsp turmeric<\/li>\n<li>1tbsp curry powder<\/li>\n<li>800 ml coconut milk (2 cans)<\/li>\n<li>2tbsp miso<\/li>\n<li>1 chicken breast, cut into pieces (<em>optional)<\/em><\/li>\n<li>1 carrot<\/li>\n<li>1 scallion<\/li>\n<li>1 lime, quartered<\/li>\n<\/ul>\n<h2>Instructions<\/h2>\n<ul>\n<li>Cook and drain the rice noodles.\u00a0 Set aside.<\/li>\n<li>Saute onion, garlic, ginger, chili pepper and lemongrass until onions are translucent, about 5m<\/li>\n<li>Add turmeric and curry powder and cook for another 2-3 minutes until fragrant.<\/li>\n<li>Pour in coconut milk and bring to a simmer.<\/li>\n<li>Add miso.<\/li>\n<li>Add chicken and\/or other veg, cut small.<\/li>\n<li>Let simmer for 10-15m until chicken is done.<\/li>\n<li>Meanwhile, shred the carrots (using a peeler, mandolin, or grater).\u00a0 Slice the scallions thin.<\/li>\n<\/ul>\n<h3>Serve<\/h3>\n<ol>\n<li>Serve over noodles.\u00a0 Top with carrots, scallions, and peanuts. Serve with a quarter lime for squeezing.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>NOTES:<\/p>\n<p>Some or all of the coconut milk can be replaced with chick stock if desired.\u00a0 (Less fat.)<\/p>\n<p>If other veg is desired, such as eggplant or potatoes, cut small and add at the same time as the chicken.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A nice, comforting dish for a cold day.
