{"id":652,"date":"2020-05-24T22:25:44","date_gmt":"2020-05-24T22:25:44","guid":{"rendered":"http:\/\/ramimarcus.com\/Recipes\/?p=652"},"modified":"2020-09-14T04:00:03","modified_gmt":"2020-09-14T04:00:03","slug":"italian-meringue","status":"publish","type":"post","link":"https:\/\/ramimarcus.com\/Recipes\/italian-meringue\/","title":{"rendered":"Italian Meringue \/ Buttercream"},"content":{"rendered":"<p><strong>Yield<\/strong>: 2-layer 9&#8243; round + decoration<\/p>\n<h2>Ingredients<\/h2>\n<h3>Meringue<\/h3>\n<ul>\n<li>200g sugar + 2tbsp<\/li>\n<li>50g water<\/li>\n<li>120g egg white (4 whites)<\/li>\n<\/ul>\n<h3>Buttercream<\/h3>\n<ul>\n<li>2 sticks (226g) room temperature butter, cut into 1tbsp pieces\n<ul>\n<li>(ADDED 2.5 last time, slightly too much.\u00a0 Try 2 next time.)<\/li>\n<\/ul>\n<\/li>\n<li>Pinch of salt (optional)<\/li>\n<li>Vanilla extract (optional)<\/li>\n<\/ul>\n<h2>Instructions<\/h2>\n<h3>Italian Meringue<\/h3>\n<ol>\n<li>Add sugar and water to a pan and heat to 250.<\/li>\n<li>Meanwhile, start whisking the whites.\u00a0 Add the 2tbsp of sugar.\u00a0 You may also add 1\/2 tsp lemon juice or cream tartar to stabilize, if desired.\u00a0 Stop if you reach soft peaks before you add the sugar syrup.<\/li>\n<li>Once the sugar mixture reaches 250F (&#8220;softball stage&#8221;) carefully pour into mixer while running on slow.\u00a0 Drizzle down the side of the bowl to avoid splashing.\u00a0 The mixture will become thinner &#8211; this is normal.<\/li>\n<li>Beat on low until bowl is cool or slightly warm to the touch, and meringue is back to soft peaks.<\/li>\n<\/ol>\n<h3>Italian Buttercream<\/h3>\n<ol>\n<li>To make Italian Buttercream, add butter a piece at a time while running on low.\u00a0 (Be sure the meringue has cooled sufficiently, you don&#8217;t want to melt the butter.)<\/li>\n<li>Add salt and extract, if using.<\/li>\n<li>Increase the speed to medium-high and whisk until combined and silky.\u00a0 It may separate initially, but don&#8217;t panic.\u00a0 Continue to whisk until it comes back together.<\/li>\n<li>If made in advance, cover and refrigerate.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Though slightly more involved, Italian is the most stable of the meringues.
