{"id":684,"date":"2020-06-07T10:01:40","date_gmt":"2020-06-07T10:01:40","guid":{"rendered":"http:\/\/ramimarcus.com\/Recipes\/?p=684"},"modified":"2020-06-07T10:06:29","modified_gmt":"2020-06-07T10:06:29","slug":"souffle-pancake-with-rhubarb-compote","status":"publish","type":"post","link":"https:\/\/ramimarcus.com\/Recipes\/souffle-pancake-with-rhubarb-compote\/","title":{"rendered":"Souffle Pancake with Rhubarb Compote"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h3>Pancakes<\/h3>\n<ul>\n<li>100g AP flour<\/li>\n<li>100g milk<\/li>\n<li>2 egg yolks<\/li>\n<li>2 egg whites<\/li>\n<li>30g sugar<\/li>\n<\/ul>\n<h3>Compote<\/h3>\n<ul>\n<li>200g rhubarb, chopped<\/li>\n<li>50g ginger, diced<\/li>\n<li>50g butter<\/li>\n<li>30g sugar<\/li>\n<li>100g water<\/li>\n<li>lemon zest<\/li>\n<li>icing sugar (<em>optional<\/em>)<\/li>\n<\/ul>\n<h2><\/h2>\n<h2>Instructions<\/h2>\n<h3>Make the pancake batter<\/h3>\n<ol>\n<li>Beat together flour, egg yolks, and milk.<\/li>\n<li>Whisk egg whites and 30g sugar to soft peaks.<\/li>\n<li>Gently fold whites into yolks.<\/li>\n<\/ol>\n<h3>Cook the compote<\/h3>\n<ol>\n<li>Melt the butter in a pot, add the rhubarb and ginger.<\/li>\n<li>Let simmer for 1 minute, then add vanilla, zest, sugar, and water.<\/li>\n<li>Simmer until soft.<\/li>\n<\/ol>\n<h3>Make the pancakes<\/h3>\n<ol>\n<li>Butter a 9&#8243; or 10&#8243; pan.<\/li>\n<li>Pour a thick layer covering the bottom of the pan.<\/li>\n<li>Let cook until bubbles start to pop on the top, and the bottom is a golden brown.\u00a0 Flip and cook until other side is golden.<\/li>\n<li>Place on a plate, spoon the compote onto the pancake and fold in half.\u00a0 Or slather on top.<\/li>\n<li>Top with dusted sugar and some lemon zest.\u00a0 Serve immediately.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>Try <a href=\"https:\/\/www.justonecookbook.com\/souffle-pancake\/\">Japanese style<\/a> sometime.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A super light and fluffy take on pancakes.
