{"id":793,"date":"2020-10-25T00:21:38","date_gmt":"2020-10-25T00:21:38","guid":{"rendered":"http:\/\/ramimarcus.com\/Recipes\/?p=793"},"modified":"2020-10-25T02:27:41","modified_gmt":"2020-10-25T02:27:41","slug":"celery-root-chowder","status":"publish","type":"post","link":"https:\/\/ramimarcus.com\/Recipes\/celery-root-chowder\/","title":{"rendered":"Celery Root Chowder"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<ul>\n<li>3 tbsp butter<\/li>\n<li>2 leeks<\/li>\n<li>4 cloves garlic<\/li>\n<li>One large celery root<\/li>\n<li>3c stock<\/li>\n<li>2c water<\/li>\n<li>1\/2c milk<\/li>\n<li>1\/2c cream<\/li>\n<li>Salt &amp; pepper to taste<\/li>\n<li>Sprig of fresh thyme (<em>optional<\/em>)<\/li>\n<\/ul>\n<h2>Instructions<\/h2>\n<ol>\n<li>Saute the leeks and garlic until soft, about 5 minutes.<\/li>\n<li>Add the celery root and stock.<\/li>\n<li>Cook until soft, about an hour.<\/li>\n<li>Stir in cream and milk.<\/li>\n<li>Puree with an immersion blender or transfer to a standard blender.<\/li>\n<li>Add salt and pepper to taste.<\/li>\n<li>Serve with fresh thyme.<\/li>\n<\/ol>\n<p>NOTES: If chowder isn&#8217;t your thing, replace the milk and cream with an equal amount of water.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;ve only seen celery root at farmer&#8217;s markets, so this is a slightly obscure soup, but it&#8217;s warm and comforting and tastes exactly as you would expect celery soup would taste like.
