{"id":878,"date":"2021-12-27T22:26:44","date_gmt":"2021-12-27T22:26:44","guid":{"rendered":"http:\/\/ramimarcus.com\/Recipes\/?p=878"},"modified":"2021-12-27T22:28:42","modified_gmt":"2021-12-27T22:28:42","slug":"878-2","status":"publish","type":"post","link":"https:\/\/ramimarcus.com\/Recipes\/878-2\/","title":{"rendered":"Pesto Chickpea Toast"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<ul>\n<li>16oz. of chickpeas (1 can)<\/li>\n<li>zest from 1 lemon<\/li>\n<li>2tbsp pesto<\/li>\n<li>tasty bread<\/li>\n<li>1 garlic clove<\/li>\n<li>65g mozzarella (about 1\/2 a ball)<\/li>\n<li>1 avocado<\/li>\n<li>olive oil<\/li>\n<li>pepper<\/li>\n<li>lemon juice (<em>optional<\/em>)<\/li>\n<\/ul>\n<h2>Instructions<\/h2>\n<h3>Prep the chickpea spread<\/h3>\n<ol>\n<li>Put half the chickpeas into a bowl and mash.<\/li>\n<li>Add the pesto and zest.<\/li>\n<li>Add olive oil or lemon juice to create a spreadable consistency.<\/li>\n<\/ol>\n<h3>Make the toast<\/h3>\n<ol>\n<li>Cut the garlic clove in half and rub the bread with the garlic.<\/li>\n<li>Sprinkle some olive oil on the bread.<\/li>\n<li>Put under broiler until golden brown.<\/li>\n<\/ol>\n<h3>Construct<\/h3>\n<ol>\n<li>Dice or chop mozzarella and avocado into pieces.<\/li>\n<li>Spread the chickpea spread on the toast.<\/li>\n<li>Pile on the mozzarella, whole chickpeas, and avocado.<\/li>\n<li>Top with freshly ground pepper and a splash of high quality olive oil.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A beefed up version of avocado toast.
