Fast
Sauce
- 1/2 tsp ground pepper
- 70g tahini
- 2 tbsp soy sauce
- 1 tbsp chili oil or chili crisp
- 2 tsp rice vinegar
- 2 tsp sugar
- 1 tbsp water
Meat Mixture
- 200g ground pork
- 2 tsp ginger, minced
- 2 tsp garlic, minced
- 1 tsp soy sauce
To Serve
- 350g noodles
- green onion
- 2 tbsp chopped peanuts

Sauce
- 1 tsp Szechuan peppercorns
- 90g Chinese sesame paste
- 2 tbsp soy sauce
- 2 tbsp chili oil
- 1 tbsp light brown sugar
- 1 tbsp black rice vinegar
Meat Mixture
- 200g ground pork
- 40g preserved mustard greens
- 1 tbsp black bean garlic sauce
- 2 tsp dark soy sauce
- 2 tsp Shaoxing cooking wine
- 2tsp grated ginger
To serve
- 2 heads baby bok choy, sliced in half lengthwise
- 350g noodles
- green onion
- 2 tbsp chopped peanuts
—Method—
Fast Method
- Put a pot of water on to boil.
- While waiting for the pot to boil, make the sauce: mix all ingredients until combined.
- Cook the noodles.
- While the noodles cook, prepare the meat:
- Cook the meat until mostly brown, about 3m.
- Add ginger, garlic, and soy sauce and cook until meat is done, about 2 more minutes.
- Serve: Place noodles in a bowl and top with sauce. Add meat. Garnish with green onion and peanuts.

Fancy Method
- Put a pot of water on to boil.
- Make the sauce:
- Toast the peppercorns for 2m, and use a mortar and pestle to grind to a powder.
- Add remaining sauce ingredients and mix.
- Blanch the bok choy for 30s in the now boiling water.
- Add the noodles.
- While the noodles cook, add all the meat mixture ingredients to a pan and cook until the meat is done, about 5 minutes.
- Just before serving place the bok choy cut side down on a hot pan and sear until starts to brown.
- Serve: Place noodles in a bowl and top with sauce. Add meat. Garnish with green onion and peanuts. Place a half bok choy face along one side.
