Nutty, savory, creamy. This dressing is great on a salad, but also works on cold noodles. Use mayo or yogurt for the creaminess but if you want to be “authentic” you gotta Kewpie.
—Ingredients—
Fast
- 2 tbsp sesame oil
- 3 tbsp strained yogurt (i.e. Greek)
- 3 tbsp neutral oil
- 1 1/2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sugar
Fancy
- 3 tbsp white sesame seeds, toasted
- 3 tbsp Kewpie mayonnaise
- 3 tbsp neutral oil
- 1 1/2 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 tsp mirin
- 2 tsp honey
- 1 tsp toasted sesame oil
- ground black pepper, to taste

Fast Method
- Combine all ingredients in a bowl and whisk vigorously.
Fancy Method
- Toast the sesame seeds until they start to darken. (~1m for “toasted,” 2-3m for raw.) Place on a plate to cool.
- Grind the sesame seeds in a mortar and pestle until mostly fine meal, with some chunkier pieces. You can use a grinder, but be careful not to overgrind.
- Mix all ingredients in a bowl.
