Japanese Roasted Sesame Dressing

Nutty, savory, creamy. This dressing is great on a salad, but also works on cold noodles. Use mayo or yogurt for the creaminess but if you want to be “authentic” you gotta Kewpie.

—Ingredients—

Fast

  • 2 tbsp sesame oil
  • 3 tbsp strained yogurt (i.e. Greek)
  • 3 tbsp neutral oil
  • 1 1/2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sugar

Fancy

  • 3 tbsp white sesame seeds, toasted
  • 3 tbsp Kewpie mayonnaise
  • 3 tbsp neutral oil
  • 1 1/2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 tsp mirin
  • 2 tsp honey
  • 1 tsp toasted sesame oil
  • ground black pepper, to taste

—Method—

Fast Method
  1. Combine all ingredients in a bowl and whisk vigorously.
Fancy Method
  1. Toast the sesame seeds until they start to darken. (~1m for “toasted,” 2-3m for raw.) Place on a plate to cool.
  2. Grind the sesame seeds in a mortar and pestle until mostly fine meal, with some chunkier pieces. You can use a grinder, but be careful not to overgrind.
  3. Mix all ingredients in a bowl.

—Notes—

  • I highly recommend toasting the seeds even if they come “toasted.” This deepens the flavor.

  • Chopped cabbage salad
  • Use as a noodle dressing
