I often like to make some rice or guacamole the night before, but I consider it optional. <\/p><\/div>\n\n\n<h2 class=\"wp-block-heading has-text-align-center\" style=\"margin-top:var(--wp--preset--spacing--60)\">&#8212;Ingredients&#8212;<\/h2>\n\n\n\n<div class=\"wp-block-columns ingredients-box has-tertiary-background-color has-background is-layout-flex wp-container-core-columns-is-layout-f56f613f wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column ingredients-column is-layout-flow wp-block-column-is-layout-flow\">\n<h4 class=\"wp-block-heading has-text-align-center\"><em>Fajitas<\/em><\/h4>\n\n\n\n<ul class=\"wp-block-list is-style-tw-border ingredients-list\">\n<li>2 lbs. chicken thighs<\/li>\n\n\n\n<li>1 lg onion<\/li>\n\n\n\n<li>1 red bell pepper<\/li>\n\n\n\n<li>1 yellow bell pepper<\/li>\n\n\n\n<li>1 green pepper<\/li>\n\n\n\n<li>1\/2 bunch cilantro<\/li>\n\n\n\n<li>1\/2 lime<\/li>\n\n\n\n<li>10 small tortillas<\/li>\n<\/ul>\n\n\n\n<h6 class=\"wp-block-heading has-text-align-center\" style=\"margin-top:var(--wp--preset--spacing--70)\"><strong>seasoning mix<\/strong><\/h6>\n\n\n\n<ul class=\"wp-block-list is-style-tw-border\">\n<li>2 tsp paprika<\/li>\n\n\n\n<li>2 tsp garlic powder<\/li>\n\n\n\n<li>2tsp ground cumin<\/li>\n\n\n\n<li>1tsp chili powder<\/li>\n\n\n\n<li>2 tsp corn starch<\/li>\n\n\n\n<li>1 tsp salt<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-column ingredients-column is-layout-flow wp-block-column-is-layout-flow\">\n<h4 class=\"wp-block-heading has-text-align-center\"><em>Black Beans<\/em><\/h4>\n\n\n\n<ul class=\"wp-block-list is-style-tw-border ingredients-list\">\n<li>2 cans black beans, rinsed<\/li>\n\n\n\n<li>2 garlic cloves<\/li>\n\n\n\n<li>1 sm jalepeno, diced<\/li>\n\n\n\n<li>1\/2 cup chicken stock or water<\/li>\n\n\n\n<li>juice from 1\/2 lime<\/li>\n\n\n\n<li>1\/2 bunch coriander, roughly chopped<\/li>\n\n\n\n<li>2 tsp ground cumin<\/li>\n\n\n\n<li>1\/2 tsp salt<\/li>\n<\/ul>\n<\/div>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading has-text-align-center\">&#8212;Method&#8212;<\/h2>\n\n\n\n<h5 class=\"wp-block-heading\" style=\"margin-top:0;margin-bottom:0;text-transform:uppercase\"><em>Fajitas<\/em><\/h5>\n\n\n\n<ol style=\"margin-top:0;margin-right:0;margin-bottom:var(--wp--preset--spacing--20);margin-left:0\" class=\"wp-block-list method-list\">\n<li>Make the spice mix &#8211; combine paprika, garlic powder, cumin, chili powder, corn starch, and salt in a bowl.<\/li>\n\n\n\n<li>Slice the bell peppers and onion into thin strips and place in a bowl.  Mix in half the spice mix.<\/li>\n\n\n\n<li>Cut the chicken into strips and place in a separate bowl.  Add the oregano and the remaining spice mix.<\/li>\n\n\n\n<li>Saute onion\/pepper mix until onions are translucent, around 8m.  Complete steps 1 &amp; 2 of the beans while occasionally stirring the onions.<\/li>\n\n\n\n<li>Add the chicken and cook until done, about 10m.  Complete bean steps 3 &amp; 4 while occasionally stirring the chicken.<\/li>\n\n\n\n<li>The fajita mixture and beans will be ready around the same time.  Add 1\/2 of the chopped cilantro to the beans.<\/li>\n\n\n\n<li>Separate everything into 5 portions.  Cut the remaining 1\/2 lime into 5 pieces.  Garnish with remaining chopped cilantro and one slice of lime each.  Serve with heated tortillas.<\/li>\n<\/ol>\n\n\n\n<h5 class=\"wp-block-heading\" style=\"margin-top:var(--wp--preset--spacing--60);text-transform:uppercase\"><em>cilantro lime black beans<\/em><\/h5>\n\n\n\n<ol style=\"margin-top:0;margin-bottom:0\" class=\"wp-block-list\">\n<li>Saute garlic cloves, jalepeno, and cumin over medium heat until fragrant, about 1-2m.<\/li>\n\n\n\n<li>Add beans and stock.  Keep on medium and allow to come to a boil.<\/li>\n\n\n\n<li>Reduce heat and simmer for 4-5m.<\/li>\n\n\n\n<li>Partially break down the beans with a fork (<em>optional)<\/em>.
