A classic American Chinese dish.

Fast
- 225g chicken sliced thin
- 260g broccoli, chopped
- 6-8 garlic cloves, chopped
- 1 tbsp fish sauce
- 1 tbsp oyster sauce
- 1/2 tsp sugar
- 1 tbsp soy sauce
- 150g water
- 1 tbsp corn starch
Fancy
- 225g velveted chicken, sliced thin
- 260g broccoli, chopped
- 4 tsp minced garlic
- 1 tsp minced ginger
- 2 tbsp oyster sauce
- 1 tbsp shauxing wine
- 2 tsp dark soy sauce
- 1/4c stock
- 1 tbsp sugar
- 1 tbsp corn starch
—Method—
Fast Method
- Put on a pot of water to boil while preparing ingredients.
- Cook the chicken over medium-high heat until about 80% done. (ABOUT XXX MINUTES.)
- Prepare the sauce by mixing all ingredients in a bowl.
- Add garlic to hot oil and cook until fragrant, about 1m. Add the minced ginger, stirring continuously for an additional minute.
- Add the broccoli and chicken. Cook for 3m.
- Turn off the heat and add the sauce, stirring continuously for 1m.
- Serve with rice.
Fancy Method
- Make the sauce by mixing all ingredients in a bowl.
- Put 1/3 cup water to boil in a pan. Add the broccoli and cover. Cook until the water is gone, about 2 minutes, then remove the broccoli.
- Cook the chicken on medium-high without touching until brown on bottom, about 1 minute. Continue to cook, stirring occasionally, for another 1 minute.
- Add the minced garlic, cook 1 minute. Add the ginger, cook 1 minute.
- Add the broccoli, then the sauce.
- Stir until sauce thickens, about 1 minute.
