Chicken & Broccoli Stir Fry

A classic American Chinese dish.

—Ingredients—

Fast

  • 225g chicken sliced thin
  • 260g broccoli, chopped
  • 6-8 garlic cloves, chopped
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1/2 tsp sugar
  • 1 tbsp soy sauce
  • 150g water
  • 1 tbsp corn starch

Fancy

  • 225g velveted chicken, sliced thin
  • 260g broccoli, chopped
  • 4 tsp minced garlic
  • 1 tsp minced ginger
  • 2 tbsp oyster sauce
  • 1 tbsp shauxing wine
  • 2 tsp dark soy sauce
  • 1/4c stock
  • 1 tbsp sugar
  • 1 tbsp corn starch

—Method—

Fast Method
  1. Put on a pot of water to boil while preparing ingredients.
  2. Cook the chicken over medium-high heat until about 80% done. (ABOUT XXX MINUTES.)
  3. Prepare the sauce by mixing all ingredients in a bowl.
  4. Add garlic to hot oil and cook until fragrant, about 1m. Add the minced ginger, stirring continuously for an additional minute.
  5. Add the broccoli and chicken. Cook for 3m.
  6. Turn off the heat and add the sauce, stirring continuously for 1m.
  7. Serve with rice.
Fancy Method
  1. Make the sauce by mixing all ingredients in a bowl.
  2. Put 1/3 cup water to boil in a pan. Add the broccoli and cover. Cook until the water is gone, about 2 minutes, then remove the broccoli.
  3. Cook the chicken on medium-high without touching until brown on bottom, about 1 minute. Continue to cook, stirring occasionally, for another 1 minute.
  4. Add the minced garlic, cook 1 minute. Add the ginger, cook 1 minute.
  5. Add the broccoli, then the sauce.
  6. Stir until sauce thickens, about 1 minute.
