Whipped Cream Strawberry Cake

Ingredients

Cake

  • 3 egg whites
  • 3 egg yolks
  • 60g granulated sugar
  • 20g oil
  • 10g milk
  • 1/2 tsp vanilla
  • 30g corn starch
  • 30g flour
  • 1qt strawberries

Whipped Cream Frosting

  • 350ml heavy cream
  • 50g icing sugar

Instructions

Cake

  1. Add egg whites and a pinch of salt to a bowl.
  2. Whisk whites until foamy.
  3. Add granulated sugar in 3 parts, whisking thoroughly in between.
  4. Whip to stiff peaks.
  5. Add yolks, 1 at a time, beat on lowest speed between each until just mixed.
  6. Combine milk, oil, and vanilla.  Add to batter on lowest speed until just mixed.
  7. Mix corn starch and flour together, and sift into batter.  Mix on lowest speed until just mixed.
  8. Pour into 2 6″ cake tins, drop on the counter 3 times to settle.
  9. Bake at 325 for 40-45 minutes, or until 200F internal temp.

Frosting

  1. Combine cream and icing sugar, whip to stiff peaks.
  2. Use a piping bag to frost the top of the first layer.
  3. Add a layer of strawberry slices.
  4. Add the second layer and frost the top and sides.
  5. Slice the top off of 7 or 8 strawberries, and make a circle in the center of the cake.

 

Next time: try to loosen consistency of whipped cream – vigurously fold or add more liquid?
