Ingredients
Cake
- 3 egg whites
- 3 egg yolks
- 60g granulated sugar
- 20g oil
- 10g milk
- 1/2 tsp vanilla
- 30g corn starch
- 30g flour
- 1qt strawberries
Whipped Cream Frosting
- 350ml heavy cream
- 50g icing sugar
Instructions
Cake
- Add egg whites and a pinch of salt to a bowl.
- Whisk whites until foamy.
- Add granulated sugar in 3 parts, whisking thoroughly in between.
- Whip to stiff peaks.
- Add yolks, 1 at a time, beat on lowest speed between each until just mixed.
- Combine milk, oil, and vanilla. Add to batter on lowest speed until just mixed.
- Mix corn starch and flour together, and sift into batter. Mix on lowest speed until just mixed.
- Pour into 2 6″ cake tins, drop on the counter 3 times to settle.
- Bake at 325 for 40-45 minutes, or until 200F internal temp.
Frosting
- Combine cream and icing sugar, whip to stiff peaks.
- Use a piping bag to frost the top of the first layer.
- Add a layer of strawberry slices.
- Add the second layer and frost the top and sides.
- Slice the top off of 7 or 8 strawberries, and make a circle in the center of the cake.
Next time: try to loosen consistency of whipped cream – vigurously fold or add more liquid?
