Ingredients
- 2c dashi
- 1/2c dried sliced porcini mushrooms
- 1/2c dried sliced morel mushrooms
- 1/2c dried sliced shiitake mushrooms
- 1tbsp soy sauce (optional)
Instructions
- Reconstitute the mushrooms: place in a bowl and
- Bring the dashi to a simmer, add the soy sauce if using.
- Add the mushrooms and soaking liquid to the dashi, leaving any grit in the soaking bowl.
- Simmer to reduce to desired strength.
- Remove about half the mushrooms and reserve for other use.
NOTES:
- Any dried mushrooms can be substituted.
