Japanese Style Mushroom Sauce

Ingredients

  • 2c dashi
  • 1/2c dried sliced porcini mushrooms
  • 1/2c dried sliced morel mushrooms
  • 1/2c dried sliced shiitake mushrooms
  • 1tbsp soy sauce (optional)

Instructions

  1. Reconstitute the mushrooms: place in a bowl and
  2. Bring the dashi to a simmer, add the soy sauce if using.
  3. Add the mushrooms and soaking liquid to the dashi, leaving any grit in the soaking bowl.
  4. Simmer to reduce to desired strength.
  5. Remove about half the mushrooms and reserve for other use.

 

NOTES:

  • Any dried mushrooms can be substituted.
