Ingredients
- 290g AP flour
- 1tbsp baking powder
- 1tsp salt
- 1/2c unsalted butter (1 stick)
- 400g sugar
- 13.5oz unsweetened coconut milk (1 can)
- 1.5tsp coconut extract
- 5 large egg whites
Instructions
- Line 2 round 8″ pans with parchment paper, grease sides with butter.
- Preheat oven to 350.
- In a mixing bowl, whisk together flour, baking powder and salt.
- In a stand mixer, beat eggs to stiff peaks. Remove to a separate bowl.
- In the stand mixer bowl, (if you scraped it out well no need to wash,) beat the butter on medium speed until light in color, then add the sugar. Continue to mix until well combined.
- Add 1 1/4 cups of coconut milk and the coconut extract.
- Fold the egg whites into the batter by hand until just incorporated. We don’t want to overmix here.
- Bake at 350F until done. (105F internal temp)
- Remove from oven, cool for 5-10 minutes in the pan, then remove to a cooling rack.
