Herb Crusted Brill w/ Tomato & Basil Salsa
A simple fish dish that still feels impressive. I have yet to find brill in my local store, but any mild flatfish can be used as an alternative.

Kimchi Fried Rice
Quick and easy fried rice, using the kimchi as the base, there’s little to do here except stir-fry everything up. A good way to use leftover rice. Or kimchi.

Eggplant Parmesan
Eggplant Parm’s a time consuming but relatively simple dish that can’t really go too wrong. I think it’s best prepared with two people to share the dredging duties. In this recipe, baking instead of frying the eggplant makes this dish healthier, but also cuts down on the prep time by not having to fry in…

Indian Spicy Pancakes
A take on dosas, this recipe uses more readily available wheat flour instead of rice and lentil flour. In this recipe the pancakes are filled with a savory spiced potatoes and green onion. Frittata
Frittatas are easy and good-looking. A good way to get rid of leftover veggies, there’s a virtually unlimited combination of ingredients. This one is a classic combination of veg, all of which can be easily swapped out depending on what’s on hand.

Stuffed Butternut Squash
Simple to make, wonderfully Fall, and of course very tasty. All of the fine chopping can be time consuming, but the stuffing can be made the day before, bringing day-of prep time to about 10m.

Poached Salmon in Miso Broth
Poaching is a delicate way to prepare fish, and the miso broth pairs beautifully with the tender salmon. Bok choy adds a little crunch for contrast, and chili pepper and ginger give a quiet kick at the finish.

Indian Butter Chicken (Murgh Makhani)
Originally created to keep extra tandoori-roasted chicken moist, this Indian dish has become a classic. Coating the chicken with yogurt and then broiling is a remarkable way of simulating the char created by the high-temperatures of a tandoori oven. The tomato and cream based sauce is rich and full of the wonderfully intense flavors of…
