Ingredients
- 2 slices of thick cut bacon, cut into 1″ slices
- 1 red pepper, chopped
- 1 jalepeno, diced (optional)
- 3-4 green onions, chopped
- 8-10 eggs
- 1/2 bunch basil
- 85g goat cheese (3oz)
- parmesan cheese to shave/grate
Instructions
- Cook bacon in a 10″ oven-safe pan on high until starting to crisp.
- Turn down the heat, add the red and jalepeno peppers.
- When peppers start to soften, add the green onions.
- While the veg is cooking, whisk together eggs. Add some grated parmesan (be generous) and ground pepper.
- Roughly chop the basil and add to the pan.
- Cut goat cheese into chunks, dot evenly around the pan.
- Slowly pour the eggs into the pan. Use a spoon to stir gently to make sure the eggs reach the bottom of the pan and are dispersed throughout.
- Once the eggs begin to set top with grated parmesan cheese.
- Move to the oven and broil for 4-5 minutes.
- Cut around the sides, then rock pan forward and back against the counter to release. Flip onto a plate, then flip again (right side up) onto your serving dish.
NOTES:
Most of the ingredients can be prepped beforehand, then you just combine in a pan and cook. Cut the basil at the last minute.
