Ingredients
- 1c kimchi
- 1tsp gochujang
- 2c cooked rice
- 2c greens – baby bok cho, spinach, swiss chard, etc.
- 3 scallions, thinly sliced
- 2tsp soy sauce
- 2 eggs, beaten
- 1tsp toasted sesame oil
Instructions
- Add the kimchi and gochujang and stir-fry until beginning to soften.
- Add the rice. If the rice is cold, wait a minute or two until it’s warmed up before adding the greens.
- Add the greens and scallions. Stir-fry until wilted.
- Push to side of pan and pour eggs into other side.
- Scramble the eggs and mix with the rice.
- Add sesame oil to serve.
NOTES:
Add water instead of rice for a kimchi “stew”. Top with toasted sesame seeds.
