Ingredients

Sachet

  • 6-8 Cardamom pods, crushed
  • pinch of Cloves
  • 2 star anise
  • cinnamon stick, crushed
  • lemongrass, crushed and thickly sliced (optional)
  • roughly chopped piece of thumb-sized ginger

 

orange zest
wedges of orange
1tbsp sugar (or 125g?)

 

750ml bottle red wine

 

  1. Create spice sachet.
  2. Add sachet and remaining ingredients to wine.
  3. Heat gently – don’t boil, or you’ll evaporate the alcohol.
  4. Remove from heat and allow to infuse for a couple hours.  Strain and gently reheat. (optional)
