Kimchi Fried Rice

Ingredients

  • 1c kimchi
  • 1tsp gochujang
  • 2c cooked rice
  • 2c greens – baby bok cho, spinach, swiss chard, etc.
  • 3 scallions, thinly sliced
  • 2tsp soy sauce
  • 2 eggs, beaten
  • 1tsp toasted sesame oil

Instructions

  1. Add the kimchi and gochujang and stir-fry until beginning to soften.
  2. Add the rice.  If the rice is cold, wait a minute or two until it’s warmed up before adding the greens.
  3. Add the greens and scallions.  Stir-fry until wilted.
  4. Push to side of pan and pour eggs into other side.
  5. Scramble the eggs and mix with the rice.
  6. Add sesame oil to serve.

 

NOTES:

Add water instead of rice for a kimchi “stew”.  Top with toasted sesame seeds.
