Ingredients
- 4tbsp butter
- 1 1/2 lbs broccoli, roughly chopped
- 1 onion, roughly chopped
- 1 carrot, roughly chopped
- 4c vegetable broth (chicken is okay too)
- 1/2c cream or 4tbsp sour cream
- salt & pepper to taste
- cheddar cheese (optional)
Instructions
- Melt butter in pot.
- Saute broccoli, onion and carrot until the onions are soft. The broccoli will also start to shrink.
- Add chicken broth. Cover and simmer until veg is soft, about 15-20 minutes.
- Add cream.
- Blend until smooth.
- Add salt & pepper to taste.
- Top with cheddar cheese if desired. You should desire it. It’s really good this way.
