Poached Salmon In White Wine

Ingredients

  1. 4 (6-oz.) skinless salmon fillets
  2. Salt & pepper
  3. 1 c. dry white wine
  4. 1 c. water
  5. Few sprigs fresh dill, plus more for serving
  6. 3 cloves garlic, smashed
  7. 2 lemons, wedged

Instructions

  1. Season salmon on both sides with salt and pepper.
  2. Bring wine, water, dill, and garlic cloves to a boil then reduce heat to a simmer.
  3. Add salmon fillets and let simmer, covered, until cooked through, 10 minutes.
  4. Cover and let rest for about 10m.
  5. Squeeze fresh lemon juice across the top just before serving.
  6. Serve with fresh dill and lemon wedges.

NOTE: You can use the poaching liquid to create a sauce by reducing while the salmon rests.  Shoot for a reduction by about half, or your desired consistency.  Take it off the heat and add 1tbsp butter, stirring until melted.  Serve immediately.

Serve with a salad with miso dressing.  Amazing.
