Sugar Cookies

Ingredients

  • 225g unsalted butter (2 sticks)
  • 200g white sugar
  • 1 1/2 tsp vanilla extract
  • 1 egg
  • 450g flour
  • 3/4 tsp baking powder
  • 3/4 tsp salt

Instructions

  1. Mix together flour, baking powder, and salt in a bowl.
  2. In a stand mixer, beat butter and sugar until creamy.
  3. Add egg and vanilla, beat until combined.
  4. Add dry ingredients, mix until incorporated.  It will be slightly clumpy.
  5. Turn out to counter, then split in half.  Place half in the fridge.
  6. Roll out to desired thickness.  Cookies will rise, but not too much.  Aim for somewhere around 1/8″ to 1/4″.
  7. Use cookie cutters to cut out shapes, and place onto a baking tray lined with parchment paper.
  8. Bake for 12-15 minutes.
