Ingredients
- 225g unsalted butter (2 sticks)
- 200g white sugar
- 1 1/2 tsp vanilla extract
- 1 egg
- 450g flour
- 3/4 tsp baking powder
- 3/4 tsp salt
Instructions
- Mix together flour, baking powder, and salt in a bowl.
- In a stand mixer, beat butter and sugar until creamy.
- Add egg and vanilla, beat until combined.
- Add dry ingredients, mix until incorporated. It will be slightly clumpy.
- Turn out to counter, then split in half. Place half in the fridge.
- Roll out to desired thickness. Cookies will rise, but not too much. Aim for somewhere around 1/8″ to 1/4″.
- Use cookie cutters to cut out shapes, and place onto a baking tray lined with parchment paper.
- Bake for 12-15 minutes.
