Pesto Chickpea Toast

Ingredients

  • 16oz. of chickpeas (1 can)
  • zest from 1 lemon
  • 2tbsp pesto
  • tasty bread
  • 1 garlic clove
  • 65g mozzarella (about 1/2 a ball)
  • 1 avocado
  • olive oil
  • pepper
  • lemon juice (optional)

Instructions

Prep the chickpea spread

  1. Put half the chickpeas into a bowl and mash.
  2. Add the pesto and zest.
  3. Add olive oil or lemon juice to create a spreadable consistency.

Make the toast

  1. Cut the garlic clove in half and rub the bread with the garlic.
  2. Sprinkle some olive oil on the bread.
  3. Put under broiler until golden brown.

Construct

  1. Dice or chop mozzarella and avocado into pieces.
  2. Spread the chickpea spread on the toast.
  3. Pile on the mozzarella, whole chickpeas, and avocado.
  4. Top with freshly ground pepper and a splash of high quality olive oil.
