Ingredients
- 16oz. of chickpeas (1 can)
- zest from 1 lemon
- 2tbsp pesto
- tasty bread
- 1 garlic clove
- 65g mozzarella (about 1/2 a ball)
- 1 avocado
- olive oil
- pepper
- lemon juice (optional)
Instructions
Prep the chickpea spread
- Put half the chickpeas into a bowl and mash.
- Add the pesto and zest.
- Add olive oil or lemon juice to create a spreadable consistency.
Make the toast
- Cut the garlic clove in half and rub the bread with the garlic.
- Sprinkle some olive oil on the bread.
- Put under broiler until golden brown.
Construct
- Dice or chop mozzarella and avocado into pieces.
- Spread the chickpea spread on the toast.
- Pile on the mozzarella, whole chickpeas, and avocado.
- Top with freshly ground pepper and a splash of high quality olive oil.
