Ingredients

  • 3 egg whites (about 90g)
  • 1tsp vanilla extract
  • 4c powdered sugar
  • Food coloring (optional)

Instructions

  1. In a stand mixer mix egg whites and vanilla until frothy.
  2. Add sugar in small batches and mix on low until incorporated.
  3. Beat on high to soft peaks.
  4. Add food coloring, if desired.
  5. You may want to add water, 1tsp at a time, if a thinner consistency for piping is desired.
    1. Alternatively, beat to stiff peaks for a thicker icing to spread more easily over an entire cookie.
