Ingredients
- 2 sticks of butter (226g)
- 2 eggs
- 120g sour cream
- 4 large bananas
- 200g sugar
- 290g flour
- 1tsp baking soda
- 1tsp cinnamon
- 1tsp salt
- 1tsp vanilla
- 1/4tsp fresh nutmeg
Instructions
- Butter a loaf pan. Preheat oven to 325F.
- Mix together dry ingredients in a bowl, set aside.
- Cream the butter, then add the eggs one at a time.
- While the butter is being beaten, mash the bananas. Add the sour cream.
- Add the banana mixture to the creamed butter.
- Add the dry ingredients until just mixed. (Overmixing creates gluten strands, which results in a denser, chewier cake.)
- Pour the batter into the prepared pan and bake for about 1 1/4 hours. Remove when internal temperature reaches 200F.
NEXT TIME:
Delicious, but bananas sank to the bottom.
Try brown sugar
Try fewer bananas (more flour?)
Could also try removing water content by microwaving to remove moisture. Reduce liquid to 1 tbsp and add back to batter.
