Ingredients
- 4 (6-oz.) skinless salmon fillets
- Salt & pepper
- 1 c. dry white wine
- 1 c. water
- Few sprigs fresh dill, plus more for serving
- 3 cloves garlic, smashed
- 2 lemons, wedged
Instructions
- Season salmon on both sides with salt and pepper.
- Bring wine, water, dill, and garlic cloves to a boil then reduce heat to a simmer.
- Add salmon fillets and let simmer, covered, until cooked through, 10 minutes.
- Cover and let rest for about 10m.
- Squeeze fresh lemon juice across the top just before serving.
- Serve with fresh dill and lemon wedges.
NOTE: You can use the poaching liquid to create a sauce by reducing while the salmon rests. Shoot for a reduction by about half, or your desired consistency. Take it off the heat and add 1tbsp butter, stirring until melted. Serve immediately.
Serve with a salad with miso dressing. Amazing.
