Spaghetti with Sardines

Yield: 2 servings

Ingredients

  • 50g breadcrumbs (about 1/2c)
  • 1 red chilli, diced (or chili flakes)
  • 3 cloves garlic, chopped
  • 1 tin sardines
  • Bunch of arugula or spinach greens
  • Pasta

Instructions

  1. Saute half the garlic and breadcrumbs in olive oil.  Cook until breadcrumbs are golden. Drain on paper towels.
  2. Pour the oil from the sardines into a frying pan.  Add the chilli and garlic and saute until fragrant, 1-2m.
  3. Chop the sardines into chunks and add to the pan, and cook until heated through, about 2-3m.
  4. Add the pasta.
  5. Mix in oregano and arugula.
  6. Serve in a pile, topped with breadcrumbs.
