Ingredients
- 1 can chickpeas, drained and rinsed (15oz)
- 3 tbsp fresh lemon juice (45ml)
- 3 tbsp tahini (60g)
- 2 garlic cloves, minced
- 3 tbsp good quality EVO
- 1/4 tsp salt
- 1/2 tsp cumin (optional)
- 1-3 tbsp water
- Dash of paprika to serve
Instructions
- In a food processor, combine tahini and lemon juice then whip until creamy, about 1 minute.
- Add all ingredients but chickpeas and process until smooth, about 1 minute.
- Add half the chickpeas, process then scrape down the bowl. Repeat with the other half.
- You may need to add some water, 1 tbsp at a time, to reach your desired consistency.
- Serve with a dash of paprika and a splash of olive oil.
