Homemade Hummus

Ingredients

  • 1 can chickpeas, drained and rinsed (15oz)
  • 3 tbsp fresh lemon juice (45ml)
  • 3 tbsp tahini (60g)
  • 2 garlic cloves, minced
  • 3 tbsp good quality EVO
  • 1/4 tsp salt
  • 1/2 tsp cumin (optional)
  • 1-3 tbsp water
  • Dash of paprika to serve

Instructions

  1. In a food processor, combine tahini and lemon juice then whip until creamy, about 1 minute.
  2. Add all ingredients but chickpeas and process until smooth, about 1 minute.
  3. Add half the chickpeas, process then scrape down the bowl.  Repeat with the other half.
  4. You may need to add some water, 1 tbsp at a time, to reach your desired consistency.
  5. Serve with a dash of paprika and a splash of olive oil.
